Thai Red Curry



Ingredients

For Meat
  • 1 lb shrimp or chicken pieces
  • 1/4 tsp salt
  • 1/2 tsp red chili powder
  • 1 tbsp oil
For curry
  • 1 tsp oil
  • 1/2 green capsicum - julienne cut
  • 10 babycorns 
  • 1/2 cup bamboo shoots thinly sliced 
  • 1/2 cup carrots thinly sliced
  • 14 oz coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp fish sauce OR soya sauce
  • basil leaves for garnishing
  • 1/2 tsp salt
Method

Meat cooking
Apply salt & red chili powder to the shrimp or chicken
Heat oil in a stew pot and sauté the meat till it changes color.
Take out and keep aside.

Curry
In the same stew pot add a tsp of oil and fry the red curry paste for a few mins 

Pour the coconut milk and let simmer on medium heat for 5 mins
Add the fish sauce and 14 oz water. 
Add in the meat and vegetables.
Simmer on medium heat for 10 mins

Garnish with basil leaves and serve hot


Notes 
  1. Chicken and Shrimp can be skipped for vegetarian option
  2. Chicken can be substituted with lamb or any other meat pieces
  3. Increase the quantity of red chili powder to increase the heat.
  4. For store bought paste, Thai kitchen is a great option.
