Indo-Chinese Fried Rice
- 3 tbsp finely chopped Garlic
- 3 tbsp finely chopped Ginger
- 3 finely chopped green chillies
- 1 bunch spring onions
- 1 cup finely chopped french beans
- 1 cup finely chopped carrots
- 1 tsp white pepper
- 1 tbsp soya sauce
- 2 tbsp tomato ketchup
- 1 tbsp oil
- 1 tbsp ghee
- 2 cups basmati rice
Method
Soak rice and keep for 1 hour
Boil water, add salt and rice to it
Close and let cook for 5 mins
Drain out the excess water, add ghee to the rice and mix well.
Spread out the rice on a plate and leave to cool.
Chop the onion part of the green onions into small pieces. slice the greens and save for later.
In a wok, put oil, add ginger garlic & green chilies and fry well.
Once slightly browned, add the onions, little salt and fry till well browned.
Add in the vegetables
Fry all well on medium heat. Once the color of all changes, add both the sauces.
Start adding little rice at a time and mix.
Close and keep for 1 min on low flame.
Add the white pepper, mix well.
Garnish with spring onion greens.
