Spicy Chilli

Ingredients

2 tbsp oil
1 finely chopped onion
2 minced cloves garlic
1 lb chicken thighs cut into thin strips
2 tsp chili powder
1 tbsp ground cumin
2 tsp oregano
1 tsp salt
2 chopped jalapeƱo peppers
1 1/2 cups chopped tomatoes
2 1/2 cups chicken broth
7 oz pinto beans
7 oz black beans
1/2 tsp ground black pepper
cilantro for garnishing

Method
In a large saucepan, heat the oil over moderately low heat.
Add the onion and garlic, cook until they start to soften
Increase the heat to moderate and stir in the chicken strips.
Cook until they change color, about 2 minutes.
Stir in the chili powder, cumin, oregano, and salt.
Add the jalapeƱos, the tomatoes and the broth.
Bring to a boil, reduce the heat, cover, and simmer for 15 minutes.
Uncover the saucepan and stir in the beans and black pepper.
Simmer until the chili is thickened, about 15 minutes longer.
Serve topped with the cilantro.
