Chicken Piri Piri
Ingredients
2 lb chicken
For Marinade
1/4 cup chopped fresh cilantro
2-inch piece fresh ginger
1 large onion
3 garlic cloves
1/2 cup cholula hot sauce
1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 tsp salt
1 tsp black pepper powder
For Sauce
3 tbsp butter
3 tbsp chopped fresh cilantro
2 finely chopped garlic cloves
2 tbsp siracha sauce
2 tbsp lemon juice
Method
For Chicken
Mix all the ingredients for the marinade and blend them together in a processor.
Marinate the chicken and keep aside for atleast 30 mins
Preheat oven to 425 deg F
Arrange chicken in a baking tray and roast for 20 mins
Set the oven to broil and broil chicken for 10 mins
For sauce
Melt butter in small saucepan over medium heat.
Add cilantro and garlic, cook until garlic begins to brown
Add siracha sauce and lemon juice.
Simmer on low heat for 2 minutes
Serve chicken topped with the sauce
