Batat Bhaaji

Ingredients

1/2 lb potatoes
1 tsp salt
1 tsp cumin seeds
1 tsp mustard seeds
4 finely chopped green chilies
1 inch sliced ginger
1 strand curry leaves
4 tbsp finely chopped coriander
1 tbsp ghee
1 tbsp oil

Method
Place potatoes in a cooker and boil for 5 whistles

Once done, take out and let cool
Peel and cut into small pieces
Toss with the salt, 1/2 coriander leaves and keep aside.

In a pan heat ghee & oil
Add in the cumin and mustard seeds and let splutter.
Add in the green chilis, ginger, curry leaves and saute for a min
Mix in the potatoes with 1 cup water and let simmer for 2 mins on low heat. If curry version is needed add in 2 cups water instead.
Increase heat and cook till required consistency is reached.
Garnish with chopped coriander

Serve with Buttered Pav or Puris
