Palak Puri

Ingredients
2 cups spinach leaves
2 cups wheat flour
1/2 cup semolina
1tsp salt
2 tbsp hot oil
1/4 warm cup water

Method
Shred the spinach leaves into very fine pieces
Mix in the rest of the ingredients.
Knead to make tough dough.
Add more water if required, The dough should be much tougher than chapati dough.

Heat oil in a wok till smoky and then reduce heat to medium
Make small balls and roll to make puris
Carefully put one puri at a time in the hot oil
It will puff up instantly, flip them and let cook for 30 secs

Serve hot with batat bhaaji, the perfect combo always!


Note: Puris are an Indian delicacy. I added Spinach to them to give it a slight twist. It is an excellent way of getting greens into my little ones tummy!
