Mutle
For Chun
1 tsp ghee
1 cup grated coconut
1/2 cup sugar
pinch of salt
1/4 cup finely chopped cashews
For Dough
1 cup rice flour
1/2 tsp salt
2 cups water
For shallow frying
1 tbsp oil
1 tbsp mustard seeds
Method
Chun
In a saucepan heat ghee
Add in the coconut and cashews and saute well till lightly browned
Add in the sugar, salt with 1/2 cup water and simmer on low heat till dry.
There should be no water left at all.
Dough
Boil water and keep aside
In a pan sauté the rice flour
Once there is a nice aroma add in the salt & hot water
Stir well, reduce gas till the water dries out
Take off heat and let cool.
Mutle
Take a ball of dough in your palm and flatten
Put a ball of chun in this. The chun ball should be half that of the dough.
Too much dough will give floury taste while too less will cause it to break easily.
Cover the chun completely with the dough and shape into small oval balls
In a pan heat the oil
Add the mustard seeds and let splutter
Place the mutle (oval balls) on the pan and brown on both sides
