Rassa Omellete

Ingredients 
4 eggs
1 big onion
1/4 tsp turmeric powder
1/2 tsp salt

Oil for cooking

Cilantro for garnishing 

For rassa
Any leftover gravy, specially Xacuti 

Method
Chop onion into fine pieces 

In a bowl beat the eggs till nice and fluffy
Add 1 tbsp water, half the chopped onion, turmeric & salt and beat some more.

Heat oil in a skillet and spread it well.
Pour a ladle of the egg mixture and cook covered for 2 mins
Flip the omelette and cook for 1 more minute

Serving
Flip the omelette onto a platter
Pour rassa over the omelette
Top with onions & cilantro
Serve hot with bread
