Spiced Quinoa
Ingredients
1 cup quinoa
1 green pepper chopped
2 garlic cloves, minced
2 tbsp butter
1/2 tsp chilli powder
1/2 tsp tumeric powder
1 tsp coriander powder
1 tsp salt
2 cups boiling water
1/4 tsp dried basil
1/4 tsp dried thyme
1 cup diced tomatoes
Method
In a large saucepan, sauté garlic in butter until tender.
Add coriander, chilli, tumeric powder and salt and saute for a minute.
Add 2 cups water, quinoa, chopped peppers, basil and thyme
Bring to a boil, reduce heat, cover and simmer for 10 minutes
Stir in the tomatoes and cook for another 10 mins ir till quinoa is cooked
Perfect as a serving bed for pan seared tilapia
