Kerala Chicken Stew
Ingredients
1 lb boneless chicken pieces
1/4 cup chopped potatoes
1/4 cup chopped carrots
1/2 tsp mustard seeds
6 curry leaves
1 cinnamon stick
1 cardamom
2 bay leaves
1/2 cup chopped onions
1 tsp sliced ginger
1 tsp sliced garlic
1 1/2 cup coconut milk
3 green chilies
1/2 tsp garam masala
1 tsp ghee
2 tsp Salt
Method
Heat ghee and add mustard seeds.
When they start popping, add curry leaves, cinnamon, cardamom and bay leaf.
In a min add onions, ginger & garlic.
Saute till they turn slightly brown.
Add chicken pieces and fry for 1-2mins.
Add potatoes, carrots, coconut milk, green chilies and salt.
Cover and cook for 30 mins till the chicken and vegetables are tender.
Add the garam masala and simmer for 5 mins
