Lamb Tagine

Ingredients


Marinade
4 tbsp olive oil
3 garlic cloves minced
2 tbsp lemon oil
1 tsp minced ginger
1 tsp paprika
1 tsp coriander
1/2 tsp cumin
1/2 tsp black pepper
1/4 tsp red chili powder
1/4 tsp ground cloves
1/4 tsp cinnamon powder
Pinch of saffron powdered
1.5 tsp salt

Other
2 lb lamb
2 cups chicken broth
1 medium sized onion finely chopped
1 cup sliced carrots
1 cup sliced potatoes
1 cup olives
1/2 cup chopped cilantro
1/2 cup chopped parsley
1.5 tbsp lemon juice

Method
Cut lamb into 1 inch pieces
Mix all ingredients listed under marinade and toss lamb pieces in it
Refrigerate overnight

Heat 1 tsp oil in a stewpot
Sauté the onion till soft.
Add in the  marinated lamb & mix well
Add the broth and bring to boil
Add the carrots & potatoes pieces, cover and simmer for 2 hours
Add in the olives and simmer another 2 mins
Take off the heat and stir in cilantro, parsley & lemon juice.

Serve hot with couscous

Note:
If using chicken instead or lamb, simmering for 30mins does the trick.
