Flourless Chocolate Almond Cake



Ingredients 

1 cup (2 sticks) unsalted butter

7 ounces bittersweet dark chocolate chips (72% cacao)

4 large eggs, separated

3/4 cup granulated sugar

1 cup almond flour

1/2 tsp salt



Method

Heat water in a saucepan 

Place a heatproof bowl on the saucepan and melt the butter and chocolate and let cool.


Mix half of the sugar into the egg yolks, mix well

Mix in the cooled butter-chocolate mixture

Mix in the almond flour and salt.


Beat the egg whites and the remaining sugar until they form soft peaks.

Fold the egg whites into the chocolate batter


Pour into a greased 10 inch springform pan.

Bake in a preheated 350F oven for 35-40 mins until a toothpick pushed into the center comes out clean.


Decorate with fresh berries and confectioners sugar
