Snake gourd - Shrimp sauté
Ingredients
10 medium sized shrimp
1/2 tsp salt
1/4 tsp turmeric
1/4 tsp red chili powder
2 snake gourds
1/2 tsp salt
1/2 tsp turmeric
1 tsp oil
1 tsp fennel seeds
2 dry red chilies
1/4 tsp sugar
Method
Clean shrimp.
Mix salt, tumeric & red chili powder.
Toss shrimp in the mix well and keep aside
Scrape the snake gourd skin and wash clean
Slice it into small pieces
Add salt & turmeric, toss well and keep aside
In a pan heat oil
Fry the shrimp till browned.
Once done, take them out and keep aside
In the same pan add red chili & fennel
Once it splutters add the sliced snake gourd pieces
Cover and keep on sim for 5 mins
Check if almost cooked, else cover and keep for additional time.
Add in the sautéed shrimp & sugar.
Mix well and keep on high gas till all the water evaporates
Serve hot with chapatis
Note: this is an adaptation of a Bengali recipe - chichinga chingri. The original called for kalonji in place of fennel seeds.
