Ukdiche modak
Ingredients
For Stuffing
1 tsp ghee
1 cup grated coconut
1/2 cup jaggery
pinch of salt
10 chopped cashews
1/4 tsp cardamom powder
For dough
1 cup rice flour
1 cup water
1/4 tsp salt
1/2 cup ghee
Method
Stuffing
Heat ghee in a pan
Add the grated coconut and saute well till slightly browned
Add jaggery and mix well.
Add 1/2 cup water and cook till dry
Add cardamom for flavour.

Method
Stuffing

Add 1/2 cup water and cook till dry
Add cardamom for flavour.
Dough
In a vessel boil water, ghee & salt
Turn off flame and add the rice flour
Mix well & knead while still hot to form a dough. Sprinkle drops of water if necessary to help with the kneading
Make small balls and keep aside
Take a modak mould.
Press a ball of dough into the walls and make a dent in the middle.
Scoop in a spoonful of stuffing
Steaming the modak
Line the steaming pan with parchment paper
Dip each modak in water and arrange in the pan with spacing
Steam the modaks in instant pot for 10 mins on high pressure
Vent as soon as done, open and take the pans out
Let the modaks cool before moving to serving plate
Makes 11 modaks
