Malaysian Curry

Ingredients
2 lb boneless chicken

For Marinade
2 tsp salt
1/2 tsp pepper 
1 tsp coriander powder
1 tsp oil

For Dish
1 tbsp oil
1 sprig curry leaves
2 star anise
1 tsp turmeric powder 
1 tsp sliced ginger
1 cup finely chopped shallots 
1 cup thick coconut milk
1/2 cup chopped carrots
1/2 cup chopped beans
1/2 cup peas

Method
Cut chicken into long thin slivers
Mix all the ingredients for marination in a bowl
Toss chicken well and keep aside for 30 mins

Heat 1/2 tbsp oil in a stewpot
Add the chicken and sauté till browned 
Take out in a dish and keep aside 

In same stewpot add the remaining oil 
Add turmeric powder, curry leaves and star anise
Let splutter, a wonderful aroma will arise
Add in the sliced ginger and shallots.
Sauté well till soft
Add in the vegetables 
Sauté for 2 minutes
Pour in the thick coconut milk
Add 1/2 cup water and fried chicken

Set heat on medium and let simmer for 10 mins
