Causa a la limeña



Ingredients 


For base

2lb yellow potatoes 

1/2 cup oil

1/4 cup lime juice 

4tbsp aji amarillo pepper paste

salt and pepper for seasoning


For topping

1 can of tuna

2 tbsp mayo

1 tsp sriracha sauce

Salt to taste


Method 


Base

Steam potatoes on high pressure for 12 mins in instant pot. Can be steamed in a pressure cooker or microwave too


Once cool, peel and mash

Mix in oil, lime juice, aji amarillo paste, salt & pepper 

Knead well to make a nice dough


Tuna salad

Mix tuna with mayo, siracha and salt as per taste


Assemble

Make small balls of the potato dough

Top with tuna salad 


Garnish with alpha alpha sprouts or olives
