Brussel Sprouts Salad
Ingredients
1/2 lb brussel sprouts
1 medium sized sweet red pepper
1/2 cup Thai lemon basil vinegarette
1/2 tsp coarsely ground pepper
1/2 tsp sea salt
Method
Peel and trim the brussel sprouts
Shred the brussel sprouts in a food processor
Slice the sweet peppers into small pieces
Mix the two together.
Pour in the vinegarette, add salt & pepper
Toss all well together and serve as a side
