Lemon Mug cake
- 2 tbsp lemon juice
- 2 tbsp milk
- 1 tbsp olive oil
- 1 egg
- 1 tsp vanilla extract
- 4 tbsp whole wheat flour
- 1.5 tbsp sugar
- 1/4 tsp baking powder
- 1/4 teaspoon salt
- 2 tbsp powdered sugar
- 1/2 tsp lemon juice
For Glaze
Method
In a 20oz mug, beat an egg
Mix in lemon juice, milk, oil and vanilla extractStir in flour, sugar, baking powder and salt.
Beat for a min Bake in microwave, on high, for 90 secs.
For Glaze
Mix powdered sugar and lemon juice
Take cake out of the microwave and drizzle with glaze.
